Protein is having a moment. Though most Americans get more than enough of the macronutrient, there is a growing obsession with adding it to any number of foods, from pizza and cookies to soda and water. When it comes to climate change, where that surplus protein comes from can have a major impact on a person’s carbon foodprint. No protein source produces as many greenhouse gas emissions as beef. In fact, pound for pound, it emits more planet warming pollutants than coal. Even still, eating in a way that’s good for people and the planet doesn’t require cutting out beef altogether; just eating less of it can have a tremendous impact.
